Monika's Delight (AKA Barnacles) or Mousse Cups
My mom made these for an extended family party. When someone asked what they were called, she said, "Monika's Delight." Somehow, one of my siblings (perhaps Jason) said, "What? Barnacles?" Ever since, it has stuck.
Preheat oven 325.
Ingredients
Any kind of cake mix
1/2 C margarine or butter, melted
1 egg
Mix the above ingredients together. Fill cupcake tin 1/2 full (a rounded tablespoon full) or 1/2 full mini cupcake tin (1/2 tablespoon). Bake at 325 for 10-12 minutes.
As soon as removed, push dent into cakes with back of tablespoon (or 1/2 tablespoon for mini muffin) for fill.
While the cooking, combine the following:
1 small pk instant pudding
1C milk
Fold in 8oz cool whip. Put into cupcake indentation.
Cool - Serve - Refrigerate. Easy to serve and carry to location. Also delicious.
