Homemade Fat-Free Refried Beans

My little family has refried beans in a few different dishes and I decided to try to make our own from our dried pinto beans.  We really like the flavor of this recipe, which we found on the blog, Near to Nothing .  These are made in the crock pot, so it is pretty easy. 2 lb. dry pinto beans (about 5 C) 1/2-3/4 large onion, roughly chopped 8 cloves of garlic, peeled and crushed 3 T cumin 1/2 T dried oregano 12 C water 4 t salt In a large crock pot, place all ingredients except  salt. Cook on high for 5-6 house, until beans are very tender, adding water as needed to keep beans covered.  Ladle out 4 C cooking liquid; reserve.  Stir in salt.  Mash beans with back of spoon or potato masher or in a food processor.  Add reserved liquid as needed for proper consistency.  Freeze in an air-tight container.  Makes about 12 C. Cilantro Lime Dressing

I had this at my sister's, Marni, house. It was so great on our Cinco de Mayo Mexican salads. 1/8 C lime juice (about 2-3 juicy limes) 1/8 C white wine vinegar or rice vinegar 1 t sugar 1/2 C canola oil 1/4 C cilantro, roughly chopped, stems removed In the jar of your blender, combine lime juice, vinegar, and sugar. Blend until ingredients are completely combined. With the blender running, add the oil in a steady stream. Add cilantro and blend until the cilantro has broken down but still maintains some of its texture. Serve with greens, on any type of Mexican salad, or use as a marinade.

Wade's Mom's "Chocolate to the Maximus" Cake

My sister, Lindsey, requests this cake from her mother-in-law every year on her birthday.  She says it tastes like "chocolate chips reincarnated."  Yum! Preheat oven 425 . 2 1/2 C semi-sweet chocolate chips 1/2 C butter 4 large eggs, separated 1 1/2 t flour 1 1/2 t sugar 1 t hot water 1. Melt chocolate chips and butter together. 2. Beat in egg yolks one at a time. 3. Add flour, sugar and water to the mixture. 4. Beat egg whites until stiff and then fold into the chocolate mixture. 5. Spoon batter into greased  8" round pan lined with parchment paper. 6. Bake at 425 for 15 minutes.  Note: it won't look done in the center. 7. Cool on rack and then refrigerate until served.  Top with a dab of whipped cream.

Homemade Liquid Laundry Detergent

This homemade laundry detergent works well for us. We use it with our HE washer. It is also cost effective.   Some kind of bucket to mix all ingredient in (2-5 gallon) 1/3 Fels Naptha Laundry soap (or Zote, Octagon, or Ivory – amounts vary) 1/2 C Borax 1/2 C Super Washing Soda Water 1. Cut your bar of Fels Naptha soap into thirds and finely grate one third. (Save the other 2/3 for another batch). 2. Put your grated soap in a pot of 6 cups of water and heat on low until the soap melts. Don’t let the soap boil. Once all the soap is completely melted, add the washing soda and the Borax and stir until dissolved. Continue stirring until the mixture thickens (almost as thick as honey). Remove from heat. 3. Pour 4 cups of hot tap water into your bucket. Add the soap mixture and stir it. (You can add a few drops of essential oil if you want here. I don’t). 4. Mint Lemonade

Our family loves to drink this during the summertime.  It is so refreshing. I got this recipe from Leah Grow, our wonderful Provo neighbor and friend. Country Time Lemonade drink mix Mint leaves Ice Water Fill your blender half way with ice.  Add enough drink mix to make the total amount of cups your blender holds (ex. you have a 6 cup blender, then add enough mix to make 6 cups of lemonade). Add mint leaves (start with what you think would be good.  You can always add more).  Fill up the blender the rest of the way with water (ex. if you have a 6 cup blender, add water to the 6 cup line).  Turn blender on.  You will want your ice to be fine, like a slushy.  If you think it needs more mint, add more.  Pour into glasses and enjoy. Smaller recipes for Ninja individual container: Fill blender bottle at least half way with ice. Add 1 1/2 scoops of Country Time Lemonade drink mix. Add mint (or strawberries, watermelon + basil, raspberries, etc)....

Nasal Saline Drops

I use this recipe to fill up our saline nose drop bottle.  Just a few drops in an infant's nose or some in your own and the mucus will come out easier in a stuffy nose.  It also shrinks the membranes in the nose.   1/4 tsp salt 4 oz water Mix the above together.  I usually heat the water so the salt dissolves better.  Then let it cool before putting it in the container.  I also half the recipe since my nose drop bottle can't hold 4 oz. 

Monika's Delight (AKA Barnacles) or Mousse Cups

My mom made these for an extended family party.  When someone asked what they were called, she said, "Monika's Delight."  Somehow, one of my siblings (perhaps Jason) said, "What?  Barnacles?"  Ever since, it has stuck.  Preheat oven 325. Ingredients Any kind of cake mix 1/2 C margarine or butter, melted 1 egg Mix the above ingredients together.  Fill cupcake tin 1/2 full (a rounded tablespoon full) or 1/2 full mini cupcake tin (1/2 tablespoon).  Bake at 325 for 10-12 minutes.   As soon as removed, push dent into cakes with back of tablespoon (or 1/2 tablespoon for mini muffin) for fill.   While the cooking, combine the following: 1 small pk instant pudding 1C milk Fold in 8oz cool whip.  Put into cupcake indentation. Cool - Serve - Refrigerate.  Easy to serve and carry to location.  Also delicious.
