Nothing Bundt Cakes' Chocolate Chocolate Chip Cake

This is a very rich, dense cake.  The original recipe has a cream cheese frosting, but we prefer a dollop of whipped cream or whip topping. We made this for a Hansen Family Game Night and my dear sister-in-law, JaNae, said, "Esther, I want you to make this for my birthday." I told her I would get her the recipe, but she said, "No, I want you to make this for me."  I missed it this year, but I owe you a birthday cake, JaNae!

Preheat oven 350

1 pkg devil's food cake (any brand)
1 pkg instant chocolate pudding (small)
1 C sour cream
4 large eggs
1/2 C water
1/2 C oil
1 1/2 C mini chocolate chips
Whipped Cream, whip topping or your preference of topping

1. Using electric mixer, beat first six ingredients.  Stir in chocolate chips.  
2. Pour into greased bundt cake pan.  Bake for 45-50 minutes.  
3. Remove from oven and allow to cool for 20 minutes.  Remove from pan. Allow to cool completely before putting frosting or topping.  (I put mine on a plate and wrap in plastic wrap and let it sit overnight in the refrigerator).  
4. Top individual slices as desired. 

Notes:

  • For my family of 6, I prefer that we don't eat an entire bundt. :D I cut up the whole cake and freeze in freezer bags with 6 slices.  When you want cake, let it thaw in the refrigerator.  
  • For mini bundts: grease a mini bundt pan and fill 2/3 full.  Bake for about 14 minutes.  (Yield: 24 mini bundts and 6 muffins)
  • Other topping ideas: raspberries, strawberries with a drizzle of chocolate sauce, ganache,
