Banana Chocolate Chip Bread (Adapted from Sheri Butterfield's Banana Nut Bread)

I got this recipe from Scott's grandma, Grandma Max.  We really love this banana bread and make it as Christmas gifts for our neighbors.  In 2013, one neighbor said, "Oh, yay!  I love your bread!  I am going to keep it a secret from my family that you came."  It is also really simple.  Enjoy! Preheat oven to 350. 3/4 C butter 1 C sugar 2 eggs 3 large bananas 2 C flour 1 tsp baking soda 1 tsp baking powder pinch of salt 3/4 C chocolate chips Cream together butter, sugar and eggs.  Add bananas.  Then add flour, baking soda, baking powder, and salt.  Stir in chocolate chips.   For regular loaves: separate batter evenly between two pans.  Bake for 1 hr at 350.  For mini loaves: separate batter evenly between 4 loaf pans (I use 5 3/4 x 3 inch pans).  Bake for 35-40 minutes  (290g batter per pan). (To make into banana nut, omit chocolate chips and add 1 C nuts).

Great No-Fail Cake

This cake is so delicious and rich!  Growing up, I loved eating it with my family. It has many names, but I like this one best! 1 box chocolate cake mix, prepared as directed (eggs, water, oil) 1 (14 oz) can sweetened condensed milk 1 (16 oz) Mrs Richardson's caramel/butterscotch 1 (8 oz) container Cool Whip (or the like) 2  7/8 oz Skor bars (or Heath Bars) broken into pieces 1. Prepare cake as directed on package for a 13 x 9 cake pan. 2. After baking, poke holes in the cake with the small end of a wooden spoon. 3. Mix together the sweetened condensed milk and Mrs. Richardson's topping.  Then pour it on top of the cake, filling up the holes. 4. Before serving, top cake with the container of Cool Whip and then sprinkle the crushed Skor bars on top.  Enjoy!

Simple Potsticker Dipping Sauce

My family likes to eat the Ling Ling potstickers from Costco (or the grocery store when I have a great coupon).  We love the dipping sauce, but we never have enough to last through the large bag from Costco.  After looking at different recipes (simple, complex, spicy, etc), I concocted this, which we like.  It is very simple. 1/8 C (or 2T) soy sauce (any kind) 1 T vinegar  (I have only used white so far) 1 t sugar Dash of red pepper flakes (optional) Mix the above ingredients in a bowl.  Then dip.  Easy!

Texas Caviar - Hungry Housewife

I really like the mix of beans, vegetables and vinegar that comes with this recipe.  I found it on the Hungry Housewife blog and tweaked it a little bit. My mom makes a great Texas Caviar that is a little different than this and is delicious! 1/2 cup apple cider vinegar 1/2 cup oil (canola, vegetable, etc) 1/2 cup sugar 1 can black beans, drained and rinsed 1 can black eyed peas, drained and rinsed 1 cup frozen or fresh corn 1 small can green chiles 2 stalks celery, chopped 1/2 red onion, chopped 1/2 green pepper, chopped Salt and pepper In a small sauce pan over medium high heat, bring vinegar, oil and sugar to a boil and cook until the sugar is dissolved. Remove from heat and cool. Add all the veggies in a large bowl and pour the liquid over the top. Cover and refrigerate overnight. Stick a spoon in there and mix it around every so often. Before serving season with salt and pepper if desired (I usually don't). Serve with chips or other things to dip in. Note: I s...
