Texas Caviar - Hungry Housewife

I really like the mix of beans, vegetables and vinegar that comes with this recipe.  I found it on the Hungry Housewife blog and tweaked it a little bit. My mom makes a great Texas Caviar that is a little different than this and is delicious!

1/2 cup apple cider vinegar
1/2 cup oil (canola, vegetable, etc)
1/2 cup sugar
1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1 cup frozen or fresh corn
1 small can green chiles
2 stalks celery, chopped
1/2 red onion, chopped
1/2 green pepper, chopped
Salt and pepper

In a small sauce pan over medium high heat, bring vinegar, oil and sugar to a boil and cook until the sugar is dissolved. Remove from heat and cool.

Add all the veggies in a large bowl and pour the liquid over the top.

Cover and refrigerate overnight. Stick a spoon in there and mix it around every so often.

Before serving season with salt and pepper if desired (I usually don't). Serve with chips or other things to dip in.

Note: I sometimes use a regular yellow onion if that is what I have available.  Sometimes I use a red pepper if they are on sale (also my husband prefers red peppers over green).
