Baked Ziti

Years ago, my friend recommended this recipe (from All Recipes) for a youth activity we had with the older people in our ward (we made three 9 x 13 pans worth!).  It was become a favorite of Scott and me.  I usually make two small 8 x 8 pans (and freeze one or take it someone in need in our neighborhood).  If you need a big one, just put everything in a 9 x 13 pan. 

1 lb dry ziti pasta (or rigitoni)
1 onion, chopped
1 lb lean ground beef (or ground pork or ground sausage)
2 (26 oz) jars spaghetti sauce
6 oz provolone cheese, sliced
1 1/2 C sour cream
6 oz mozzarella cheese, shredded
2 T grated Parmesan cheese

1. Bring a large pot of lightly salted water to a boil.  Add ziti and cook until al dente (according to package). Drain.

2. In a large skillet, brown onion and ground beef over medium head.  Drain and set aside.

3. Preheat oven 350 F. Spray pans (2 8x8 pans or 1 9x13 pan).  Lay as follows for each 8x8 pan: 1/4 of the ziti, 3 oz provolone cheese, 3/4 C sour cream, 1/4 browned meat/onions, 1/2 can of sauce, 1/2 remaining ziti, mozzarella cheese, 1/2 remaining browned meat/onions, 1/2 can sauce.  Top each 8x8 with 1 T parmesan cheese. 

4. Bake for 30 minutes or until cheeses are melted (temperature in middle is 165 F).

To Freeze: Cover pan with foil and write: Baked Ziti, Thaw at least 24 hours before baking, Cook at 350 for 50-60 minutes.
